I have an IoT device and I would like to know how the voltage varies when there is a communication. Is it possible to do it with Otii? Which should be the assembly to do it properly? It has to be done with sense?

To give you the best answer, I need to understand your set-up but yes, you can use Sense+ or/and Sense- to graph voltage.

I suggest something like this:
By using ADC+/- connection, you are also able to see the current consumption of your sensor.
Enable the channels ADC in current tab and ADC in voltage tab.
Size of shunt R depends on the measurement range.
Remember that AGND connection will give a GND connection to USB GND of your computer.
